DVAR......the Indian Speciality Restaurant, where one can also enjoy delicacies from Kabul, Peshwar, Lahore and Punjab, which is at RADISSON BLU DWARKA…..Impressive infrastructure….is right on the main road, very easy to locate. Nicely constructed circular, open in the centre and covered on the top like a tomb…..magnificent view. The 200+ room hotel has two restaurants…DVAR, and RICE, with Chinese Cuisine, a Coffee Shop and a Bar and also a Disc, Shopping Arcade on ground floor.
Met Mr Rakesh Sethi, the Celebrity Executive Chef. Such an
expert, experienced person and so humble. His passion for food is clearly visible
from the innovative food that we savored.
We had the food at DVAR where they have live music all days
except Sundays. Food here was quite innovative and was served in unique and
different style of serving dishes. Presentation was again great.
Started with the Chef’s signature dish…PAPRI CHAAT WITH
YOGHURT…the molecular style yoghurt sphere on top of crisp papri with
chutney…was yumm and presented nicely. TINY SAMOSA WITH LENTIL SHORBA…..very
very tine samosa with perfect shape and
dal filling, crisp with moong dal piping hot lentil shorba. SAFFRON
SORBET…..specialty of Azerbijan, milk with saffron, this I found a bit sweet.
MAKHMALI CHICKEN PINDLIYAN……roasted and stuffed with keema, were awesome.
PANEER TIKKA….Very colorful with red and green dips and stuffed with cashews.
SABZ KI KULFI….served in small glass , spicy veg kulfi with sugar syrup , so
good to taste with great style of presentation. NEEMBU KI MACHCHI…..sole fish
well marinated with lemony flavor was served with yoghurt dip, again served in
fish shaped dish. JANNTE JAMEEN…..here potato, mushroom was marinated with
yoghurt with walnut dust on top to give crunchy feeling .
SUBJI KI GALOUTI & MUTTON GALUTI…..both melted in mouth
, very soft and very tasty with perfect
balance of spicy and very thin chapati base to hold it.
Although we were full with all the above delicacies….but the
Chef Rakesh Sethi and the team insisted to try out few more dishes from the
mains. So came the COOKER with COOKER KA KUKKAD…..served in pressure cooker
itself chicken in mouthwatering curry with keema added to the curry. DAL MAKHNI
and SUBZ KOFTA , perfect….DAL MAKHNI was served in Handi and SUBZ KOFTA was
served in thin long serving dish. NALLI SHEHNAI GOSHT……Lamb Shanks in gravy,
well done in tasty gravy was presented in longish dish.
PAN KULFI & GULUKAND CAKE…..delicious kulfi with ice
crème, gulukand cake and very thin fried beetal leaves was eye catching also.
KULFI ALSKA or SULAGTA HIMALAYA……kulfi with unique way of serving with flambé
technique…….one can feel the burning pahad.
Enjoyed the evening along with Exec Chef Rakeh Sethi with warm hospitality, delicious food and nice
chat with him, live music, our favourite old song and gazals.
